5 medium zucchini’s- sliced
1 onion diced
2 28 oz. cans diced tomatoes
1 tablespoon garlic powder
2 tablespoons Italian seasoning
½ tablespoon oregano
1 tablespoon parsley
Slice zucchini about ½ in thick. Layer in crock pot alternately with onions and tomatoes. Sprinkling seasonings, over the layers. Pour ½ cup water over all and cook for about three hours on medium. About 30 mins. before serving, add ½ cup parmesan cheese. For a different dish, try adding a bag of frozen corn to this recipe.
